Chicken Enchiladas ala Liz
Long time ago, I was at my friend’s house and she made this meal for us, and I thought it was really good. So, since then, I was making it for my family. It’s a Mexican recipe, but, it’s good and my husband and son love it. The younger kids don’t care for it, they prefer Chicken nuggets instead.
This is easy to make, and not a lot of ingredients.
Ingredients:
1 lb. skinless, boneless chicken breast (boiled and cut into little cubes)
1 cup salsa
1 cup cream of mushroom soup
3 tbsp. taco seasoning
1/2 cup sour cream
1 cup grated cheese
1/2 cup onion (optional)
10 medium size soft tortillas
Direction:
1. On a medium size bowl, mix 1/2 cup salsa, 1/2 cup cream of mushroom soup, 1 1/2 tbsp taco seasoning, 1/4 cup sour cream, 1/2 cup grated cheese, 1/2 cup onion (optional) add the chicken and mix together.
2. When the mixture is ready, wrap in soft tortillas, and put in a glass pan.
3. Mix the rest of the ingredients, except the cheese. Pour on top of the wrapped mixture, sprinkle the remaining cheese on top , cover with aluminum foil, and bake for 30 minutes at 350 degrees F.
4. Serve with Spanish rice, and cherry peppers.
