Shrimp Fried Rice
My hubby loves fried rice, only when I make it.. It doesn’t matter whether it’s shrimp or chicken, as long as I made it, he will gobble it..
Most of the time, he prefers Shrimp Fried Rice, so I have to buy the raw shrimp, it’s tastier than the cooked one. He loves it most with egg over easy on top of his rice. I love to put some carrots, or green onions, but hubby is not fond of any veggies.
Picture: Courtesy of Google, but it looks exactly like my fried rice.
Ingredients:
2-3 cups of freshly cooked white rice
1 tbsp. carrots, chopped into small pieces
1/2 tbsp green onions (onion leaves)
corn and green peas are optional
2 cloves of garlic, chopped
1/2 small onion, chopped
1/2 –1 tsp. soy sauce
salt and pepper
4 eggs
10 pcs. medium shrimp, peeled.
1 tsp. cooking oil
Direction:
1. In a medium pan, crack open 2 eggs, and scramble it out of the pan, and set aside when it’s cooked
2. In the same pan, sautee the garlic, and onion. Then put the shrimp, pepper and soysauce. When the shrimp seemed to be cooked, add the carrots. Cook for at least 2-3 minutes
3. Put the rice, and the rest of the veggies, stir occasionally to avoid burning of the rice. Then add the scrambled egg. Season to taste.
4. The rest of the eggs would be cooked over easy and put over the rice when you serve it.. (it’s my hubby thing)
Serve 2-3
